
Dodna is a simple and famous breakfast of the Udupi cuisine.
When there is an excess of Dosa batter(rice:urad:: 3:1), the batter is seasoned with onions/green chillies/ginger/curry leaves/salt to make Paddu/Guliyappa.
When there is an excess of Idly batter(rice:urad::2:1), the batter is seasoned with onions/green chillies/ginger/curry leaves/salt to make Dodna.
The best bit of Dodna is how crunchy it is to eat.
Dodna is made in a thick bottomed Kadai. The seasoned batter is smeared in a Kadai and cooked to golden roast on both the sides.
